Decaf Peruvian Cajamarca (Swiss Water) (Organic, Fair Trade)
Region: Ayacucho
Altitude: 4300-5900 ft.
Process Method: Fully Washed and Patio Dried
Varietal: Typica, Bourbon, Caturra
6/Acidity 7/Body 8/Character
Tasting Notes:
Similar to the Mexican, this one is sourced from small cooperatives in the northern part of Peru. The beans are decaffeinated using the Swiss Water Process. The Cajamarca displays sweet citrus and lemon notes, with dark chocolate and a nutty finish. One of our favorite decafs!
About the Coffee
Peruvian coffees are grown high up in the Andes Mountains. The exceptional altitude and soil results in a coffee with a crisp, bright acidity, gentle sweetness and a nice medium bodied. It is in our opinion one of the most consistent origins in terms of quality.
Peru is also well known for organic coffees due to a lot of the farms and mills having adopted organic standards and more modern operations. While not as well known as some of the other South American origins such as Brazil, Colombia or Costa Rica, this is mostly due to a lack of marketing. We highly recommend you give Peruvians a try!
